I made these ribs yesterday and was not sure what I was getting myself into. I always make ribs in the oven and then finish them off on the grill. My grocery store had a special on ribs, buy one get one, so I picked some up. I was planning on doing my usual routine but since the New Year me and my husband have been in project mode upgrading our kitchen and our garage has been taken over. The effort required to get the grill out of the garage was a huge task, so I decided to improvise and try something new: slow cooked ribs in the crock pot. I was very surprised on how well they turned out. They fell right off the bone and they stewed in the sauce and drippings that gave them a ton of flavor. Like a chili or spaghetti, I felt they were best later that day after they had cooled and settled a while. The sauce and rub I made was sweet and tangy. The vinegar and apple juice give it the tanginess, while brown sugar and honey make it sweet, and finally I added a slight kiss of garlic and yellow mustard powder for some depth. My mom and daughter really enjoyed them, as did I. Normally, dinner options can be limited for a toddler but this meat fell right off the bone and was soft enough for her to eat and easy to cut up (just be careful of bone fragments). Minimal work and kid friendly! Bonus!
